In the head of the Alcudia Valley, the Dehesa de Castilseras, crudle of the COVAP cheese production, covers an area of 9,000 hectares of crops, pasture, holm-oak wood and scrubland.
In that plant the milk collected everyday from more than 700 farms which are partners or the Cooperative and devote themselves to the production of sheep, goat and cow milk is processed under a strict health control. They have their own milking parlour as well as cooling tanks that maintain milk at a controlled temperature until its move to the cheese factory.
The asociated farms are ruled over by physiochemical and bacteriological quality parameters set by COVAP Technical Support that supervise each farm and ensure traceability and quality of each piece.
By applying the most advanced technology to such a traditional product like cheese, COVAP offers to its customers a complete range of cheeses made with sheep, goat or cow milk.
